Grilled Peach Salad

Sweet and savory, this grilled peach salad combines peaches, asparagus & summer squash with a simple homemade balsamic vinaigrette! Serve over fresh mixed greens for the perfect bite of summer.

Ingredients
  

For the Salad

  • 2 peaches sliced
  • 1/2 lb asparagus
  • 2 medium zucchini sliced
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • Pinch Sea Salt
  • 4 cups mixed greens
  • Optional- 4 ounces soft cheese such as burrata, mozzarella, brie, etc.

For the Dressing

  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 cloves garlic finely minced
  • 1/2 lemon juiced
  • 1/2 tablespoon whole grain mustard
  • Sea Salt and Black Pepper

Instructions
 

  • Heat up an outdoor grill or an indoor grill pan. Place the sliced peach halves across the grill grates, and grill for 5-6 minutes until the peaches have nice grill marks. Set on a plate, and slice peaches into bite-sized pieces.
  • After the peaches, place the vegetables on the grill as well. Grill for 3-4 minutes or until the vegetables begin to have a nice char, then flipping. Set vegetables aside.
  • Add all the peach salad dressing ingredients to a mason jar or small bowl.  Mix well to combine.
  • To serve: add mixed greens to a large serving plate or serving bowl. Top with the sliced grilled peaches and vegetables on a bed of fresh greens, and dress with the salad dressing.  Top with a crumbled cheese and enjoy!
  • Store leftover peaches or salad in an airtight container for up to 1 day.
