Equipment

  • Belgian Waffle Maker

Ingredients

For the Apples

  • 3 small apples diced
  • 2 tablespoon butter or subsitute coconut oil for a vegan version
  • 1/2 teaspoon cinnamon

For the Waffle Batter

  • 1 cup apple pie filling *recipe for my low sugar apple pie filling in Notes below!
  • 2 cups all-purpose flour all purpose flour, or a certified gluten free version if needed
  • 1 1/2 cup plain unsweetened almond milk
  • 1/4 cup coconut oil melted
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon baking powder
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat oven to 300 degrees Fahrenheit.
  • Finely dice the apples, and add them to a pan with the cinnamon, butter or coconut oil. Sauté for 5 to 6 minutes until apples begin to soften.
  • Add HALF the sauteed apples to a large bowl (saving the other half of the apples for a garnish), and combine the rest of the waffle batter ingredients together.
  • When your Belgian Waffle maker is ready, scoop the approved amount of batter into the maker, and close the lid carefully. Your waffle maker instructions should say exactly how much batter to use.
  • Once waffle has finished cooking, place it on a sheet pan in the oven to keep it warm. Repeat steps until the batter is gone.
  • Top each waffle with a scoop of the sauteed apples. Serve with powdered sugar, apple compote or homemade applesauce, fresh fruit, and a drizzle of maple syrup.  Rise & SHINE!
