Instant Pot Chocolate Rice Pudding

This Instant Pot Chocolate Rice Pudding recipe is a creamy and decadent dessert in the pressure cooker.  This simple recipe cooks in just 7 minutes, but tastes like it took all day. A naturally sweetened rice pudding with cacao powder, vanilla extract, and arborio rice.

Ingredients
  

  • 1 cup plain unsweetened almond milk
  • 1 cup water
  • 2 tablespoons cacao powder
  • 1/8 teaspoon Sea Salt
  • 3 tablespoons maple syrup or brown sugar
  • 1/2 cup arborio rice
  • 1/2 cup coconut milk
  • 1 teaspoon vanilla extract

Instructions
 

  • In the instant pot, whisk together the almond milk, water, cacao powder, salt, and maple syrup. Add the rice and seal the instant pot lid. Cook on Manual or High Pressure Mode for 7 Minutes.  Natural release the pressure for 10 minutes, then after 10 minutes manually release the remaining pressure, taking care to keep your hands and face from the steam vent.
  • Carefully remove lid and stir in the coconut milk and vanilla.
  • Enjoy warm, or chill in the refrigerator 2 hours before serving.
