Salsa Verde with Avocado Toast

Salsa verde with avocado toast is a hearty high protein brunch recipe made with green tomatillo salsa, avocado, and a perfectly fried egg. A hearty breakfast recipe that is ready in 10 minutes, and a great weekend meal for those who like a little spice in their mornings!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 egg
  • 2 slices bread gluten free
  • 1/2 ripe avocado
  • 1 tablespoon lime juice
  • 3 tablespoons tomatillo salsa recipe linked below!
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon adobo seasoning
  • 1 tablespoon sweet onion
  • 1 tomatillo thinly sliced
  • Sea Salt and Black Pepper

Instructions
 

  • In a frying pan, heat olive oil over low heat. Fry the egg, about 4 minutes on one side, then flip and remove pan from heat, but leave the egg in the hot pan for 3 minutes so it can continue cooking.
  • In a medium bowl, add 1/2 avocado and mash with a fork. Add the lime juice, tomatillo salsa, adobo seasoning, and garlic powder and stir well to combine. Set aside.
  • Toast the bread until lightly golden brown. Spread one side of each piece of bread with the avocado & tomatillo mixture, dividing it evenly between the bread slices.  Top the avocado with thinly sliced onion, and one thin slice of your tomatillo, then the fried egg, then top with remaining tomatillo salsa.  Enjoy!
