Sometimes you just need to treat yo self! This delicious, simple fudge can be made in about 10 minutes and ready to eat in just a little over an hour. Made with simple whole ingredients, and is vegan, gluten free, refined sugar free!

This is one treat that is perfect to eat straight from the freezer.  The freezer helps keep the ingredients cool.  With the coconut oil, the fudge may melt if it’s left out at room temperature for too long.  I’d recommend storing this fudge in the freezer or fridge until you are ready to eat.

What’s In This Vegan Fudge with Walnuts Recipe?

  • Almond butter: or you can substitute an almond or cashew butter instead. Like my peanuts, I only use unsalted peanut butter.
  • Maple syrup: for natural sweetness without the refined sugar, I’d definitely recommend using a natural maple syrup over sugar in this recipe.  And don’t use fake pancake syrup… only the real deal maple syrup in this recipe! 
  • Coconut Oil: I love keeping a few jars of this organic coconut oil on hand, it’s great for cooking and also a really nice skin moisturizer outside the kitchen.
  • Raw Cacao Powder: this raw unsweetened cacao powder is delicious in this fudge.
  • Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor. This real all natural vanilla is a fantastic ingredient to give these cookies an #extra boost.
  • Pinch of salt: again, for a hint of flavor
  • Walnuts: add a great texture to this fudge.

How Do I Make This Vegan Walnut Fudge Recipe?

  1. In a large mixing bowl, whisk together the peanut butter, maple syrup, coconut oil, cacao powder, vanilla extract, and pinch of salt. Mix until the fudge becomes smooth and well incorporated.
  2. Fold the walnuts into the mix, saving some to sprinkle on the top.
  3. Place the fudge in the freezer, and slice once it has hardened.

This fudge will soften when left out at room temperature, so I recommend leaving it in the freezer or refrigerator.

Ingredients
  

  • 1 cup peanut butter
  • 1/3 cup Maple syrup or raw honey
  • 1/3 cup melted coconut oil
  • 1/4 cup raw cacao powder
  • 1 teaspoon vanilla extract
  • Pinch Sea Salt
  • 1/2 cup walnuts with extra to top

Instructions
 

  • Line a 9×9 baking dish with parchment paper and set aside
  • In a large mixing bowl, whisk together the peanut butter, maple syrup, coconut oil, cacao powder, vanilla extract, and pinch of salt. Mix until the fudge becomes smooth and we’ll incorporated.
  • Fold the walnuts into the mix, saving some to sprinkle on the top.
  • Place the fudge in the freezer, and slice once it has hardened.
