One of the best perks about living in New England is all the fresh apples you can pick in the fall. This recipe is a great way to use up those apples from the orchard, but it also works anytime of year or when your farmers market or store has a sale on apples.
I love the smell of apples + cinnamon cooking in the morning, it makes the house smell amazing. This apple pie baked oatmeal is a healthier version of the dessert classic, a totally guilt-free recipe made with whole grains and fresh fruit.

I stock up on organic produce with Misfits Market – they have a fantastic selection of in-season fruits & veggies, healthy pantry items, and great food finds for a fraction of grocery store prices! You can get $10 off your first $30 box by clicking here!
- Old Fashioned Oats: I used old fashioned oats for this recipe. I found old fashioned oats work much better than quick oats, as they hold up really well to being baked.
- Apples – any variety you prefer, I used Granny Smith
- Almond Milk – plain and unsweetened! The higher the fat content, the creamier the milk will be.
- Cinnamon: which gives this dish a subtle spice-y touch! I love to add in a pinch for extra warmth and depth of flavor.
- Ground Flaxseeds: I always add a scoop in my oatmeal for a little extra nutritional punch! This flaxseed meal has a wonderful nutty flavor too. Flaxseeds have a ton of amazing health benefits, so add a scoop to breakfasts, lunches, or smoothies!
- Brown Sugar, or any natural sweetener of your choice
- Coconut Oil: I always keep a few jars of this organic coconut oil on hand, it’s great for cooking and baking.
- Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor
