It’s National Grilled Cheese Day everyone! I’ve always been a fan of grilled cheeses, but decided to make today’s totally extra. I added some tzatziki sauce (which is a traditional Greek creamy garlic and dill sauce) and some fresh kale. We made tofu shawarmas the other night and I had some tzatziki sauce left over… and the Tzatiki Grilled Cheese was born!
 
But don’t worry – if you aren’t vegan or dairy free you can use regular cheese and classic tzatziki sauce, it’s ALL good!

What Is Tzatziki Sauce Anyway?

Tzatziki is a traditional Greek dip made with cucumber, Greek Yogurt, dill, garlic, and lemon juice or vinegar. I make a killer vegan tzatziki which we love to eat on our homestead.

I love adding a dollop or tzatziki on pitas, shawarmas, or just as a dip for veggies. Whether you use a yogurt-based tzatziki or a dairy-free version like this one, it tastes AMAZING in a grilled cheese! It adds a layer of creamy garlicky goodness… you can’t go wrong with a tzatziki grilled cheese.

What’s In This Grilled Cheese with Tzatziki Sauce?

  • Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry.
  • Bread – I like to use thick crusty bread for my grilled cheese.
  • Spinach or any greens of choice
  • 2 slices of cheese: use your melty favorite.

How Do I Make Creamy Garlic Grilled Cheese?

  1. Brush one side of bread with olive oil. Place it oil-side down on a plate. Add the sauteed kale, 2 slices of cheese, and spread a thin layer of the tzatziki sauce on top of the cheese. Place the other side of bread on top, and brush the top side with olive oil.
  2. Press in a panini press for 5-10 minutes until bread is toasted golden brown, and cheese is warm and melty in the middle. Slice, mangia, and enjoy!

Ingredients
  

  • 1 teaspoon butter
  • 2 slices bread use gluten free if you avoid wheat
  • 1/2 cup sauteed spinach
  • 2 slices melty cheese like mozzarella
  • 2 tablespoons tzatziki sauce

Instructions
 

  • Brush one side of bread with melted butter. Place it butter-side down on a plate. Add the sauteed spinach, cheese, and spread a thin layer of the tzatziki sauce on top of the cheese. Place the other side of bread on top, and brush the top side with more butter.
  • Press in a panini press for 5-10 minutes until bread is toasted golden brown, and cheese is warm and melty in the middle.  Slice, mangia, and enjoy!
