Turkey salad with yogurt is my #1 go-to recipe for leftover turkey breast!  We celebrate Thanksgiving twice each year (once for Canadian Thanksgiving, and once for American!) so we always end up having lots of leftover turkey around the holidays.  This delicious turkey salad recipe is creamy from the Greek yogurt, sweet from fresh apples, and crunchy from the celery.

If you’re looking for a great way to use leftover turkey meat, this is the recipe for you. This recipe uses high protein Greek yogurt instead of mayonnaise. The turkey salad is still delicious and creamy, but without all the fat from traditional mayo.  This lean turkey salad is great to enjoy over a salad of arugula, spinach, or any greens you love!

  • Cooked Turkey Breast – I used the cooked breast from a roasted Thanksgiving turkey that we got from a local farm down the road. If you can, support your local farmers!
  • Apples & Celery & Parsley
  • Greek Yogurt – make sure it’s plain and unsweetened!  You can use a fat free Greek yogurt like this one (it’s our favorite!) or a full fat yogurt too. Make sure you get Greek yogurt and not plain yogurt, the thickness really makes this dish fantastic!
  • Dijon Mustard – for a really nice flavor and texture, this dijon is a favorite in our pantry.
  • Walnuts
  • Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen.
  • Black pepper

Turkey Recipes for Thanksgiving or Holiday Leftovers

This turkey salad with Greek yogurt is a fantastic recipe to use up those leftovers from the holidays.  Add a few simple refrigerator ingredients to your turkey leftovers to give it a second life.  I always have a plan for how to use leftovers so we don’t throw anything away.

Making a big bowl of turkey salad is a great way to use up any extra leftovers, and have prepared meals for the week. 

How To Make Turkey Salad without Mayo

  1. In a large mixing bowl, add the chopped turkey breast, apple, celery Greek yogurt, Dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
  2. Add the walnuts and parsley, and fold into the the turkey salad.
  3. Serve over arugula, spinach, or on a wrap and enjoy!

Ingredients
  

  • 2 cups cooked turkey breast shredded or diced
  • 1 apple diced, I used a honey crisp apple
  • 2 stalks celery chopped
  • 1 cup plain Greek Yogurt I used fat free
  • 1 tablespoon dijon mustard
  • 1/4 teaspoon Sea Salt
  • 1/2 cup walnuts crushed
  • 1/2 teaspoon Black Pepper
  • 1/2 cup fresh parsley chopped

Instructions
