Turkey apple salad sandwiches are one of my go-to recipes for leftover turkey breast! We celebrate Thanksgiving twice each year (once for Canadian Thanksgiving, and once for American!) so we always end up having lots of leftover turkey around the holidays. This delicious turkey apple salad recipe is creamy from the Greek yogurt, sweet from fresh apples, and crunchy from the celery.

The turkey salad is still delicious and creamy, but without all the fat from traditional mayo. - Cooked Turkey Breast – I used the cooked breast from a roasted Thanksgiving turkey that we got from a local farm down the road. If you can, support your local farmers!
- Apples & Celery
- Greek Yogurt – make sure it’s plain and unsweetened! You can use a fat free Greek yogurt like this one (it’s our favorite!) or a full fat yogurt too. Make sure you get Greek yogurt and not plain yogurt, the thickness really makes this dish fantastic!
- Dijon Mustard – for a really nice flavor and texture, this Dijon is a favorite in our pantry.
- Walnuts: because I love adding nutritious ingredients to my foods when I can. I

Easy Turkey Sandwiches for Thanksgiving or Holiday Leftovers
This apple turkey salad sandwich is a fantastic recipe to use up those leftovers from the holidays. Add a few simple refrigerator ingredients to your turkey leftovers to give it a second life. I always have a plan for how to use leftovers so we don’t throw anything away. Making a big bowl of turkey salad is a great way to use up any extra leftovers, and have simple prepared meals for the week.

How To Make Turkey Salad Sandwich without Mayo
- In a large mixing bowl, add the chopped turkey breast, apple, celery Greek yogurt, Dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
- Add the walnuts, and fold into the the turkey salad.
- Toast slices of your favorite bread. Add a handful of greens (I like arugula or spinach), and about 3/4 cup of the turkey salad on each sandwich. Slice in half, and dig in!

Turkey Apple Salad Sandwich
Ingredients
- 2 cups cooked turkey breast shredded or diced
- 1 apple diced, I used a honey crisp apple
- 2 stalks celery chopped
- 1 cup plain Greek Yogurt I used fat free
- 1 tablespoon dijon mustard
- 1/4 teaspoon salt
- 1/2 cup walnuts crushed
- 1/2 teaspoon freshly ground Tellicherry Black Pepper
- 8 slices bread use gluten free
- 2 cups arugula or other leafy greens
Instructions
- In a large mixing bowl, add the chopped turkey breast, apple, celery Greek yogurt, dijon mustard, salt, and pepper. Stir well and taste, adding more and and pepper if desired.
