This tomatillo salsa verde breakfast sandwich recipe is the perfect vehicle to use up any older produce, extra salsa, or veggies you have on hand. Add your favorite ingredients and enjoy!  A fantastic way to use ripe produce (avocado or tomatillos) before it goes bad, or that extra scoop of salsa verde at the bottom of the jar – this easy brunch sandwich is delicious.

How Do I Make This Salsa Verde Breakfast Sandwich Recipe?

  1. In a frying pan, heat olive oil over low heat. Fry the egg, about 4 minutes on one side, then flip and remove pan from heat, but leave the egg in the hot pan for 3 minutes so it can continue cooking.
  2. In a medium bowl, add 1/2 avocado and mash with a fork. Add the lime juice, tomatillo salsa, adobo seasoning, and garlic powder and stir well to combine. Set aside.
  3. Toast the bread until lightly golden brown. Spread one side of each piece of bread with the avocado & tomatillo mixture, dividing it evenly between the bread slices.  Top the avocado with thinly sliced onion, and one thin slice of your tomatillo, then the fried egg, then top with remaining tomatillo salsa.  Enjoy!
