Hello spring, and hello vegan pesto garlic bread! Pesto is our go-to sauce every spring, when the fresh herbs start popping up around the homestead. This year we are growing parsley, basil, and mustard greens which make especially vibrant and spicy pesto. Seriously, if you haven’t tried growing mustard greens, do yourself a favor and give them a shot! This pesto garlic bread goes great with creamy tomato spinach pasta, as a side with instant pot risotto, or just as a quick lunch on a busy day. Use any kind of bread you have on hand, pesto of your choice, and mangia!

This spring pesto garlic bread is a great way to get in some seasonal fresh produce!  Spring time means fresh greens sprouting out of the ground, spring onions, peas, and fresh herbs. Combine amazing fresh ingredients into this healthy and delicious pesto sauce, and bake it on garlic bread. Drizzle on a little balsamic vinegar on top of the baked bread, and you have an extra zing of bright flavor!

We got this great 6-Pod Aerogarden which is fantastic for growing herbs in the winter or spring.  We actually got it when we lived in a smaller apartment, but even now that we own an acreage we still use it year-round!  I love growing herbs on my countertop like fresh basil, dill, mint, sage, thyme, parsley, and lemon balm. It uses LED lights and water, so no messy soil needed – you can have fresh herbs at your fingertips any time. I love picking a few springs of parsley to chop on pastas, adding basil leaves to dishes like this pesto, and tossing some dill in with my pasta salads. This Aerogarden is a great gift for anyone who would like fresh herbs… no big kitchen or green thumb required!

How Do I Make Vegan Pesto Garlic Bread?

  1. In a small bowl, mix the olive oil, fresh garlic, garlic powder, garlic salt, and crushed red pepper flakes.
  2. Slice baguette lengthwise and brush with a thin layer of olive oil mixture.
  3. Place baguette in oven and broil on High for 1 or 2 minutes until the edges of the baguette begin to lightly brown.
  4. Remove from oven, and spread a thin layer of pesto on top of the bread. Place bread back under the broiler for another 2 minutes or until bread is crispy and golden brown. Keep an eye on the bread so it doesn’t burn.
  5. Once bread is finished, remove from oven and top with a drizzle of balsamic vinegar and fresh basil.  Mangia!
