This savory vegetable ricotta toast recipe is the perfect breakfast when you want something totally decadent but also want it in 5 minutes. This beautiful toast takes advantage of leftover vegetables, and is loaded on creamy and sweet ricotta. Drizzle some honey on top, add a sprinkle of sea salt, and breakfast is served.
We recently grilled some end of summer asparagus and zucchini – and this seemed like the perfect way to enjoy leftovers!  I spread creamy ricotta on homemade toast, loaded on the vegetables, and drizzled on the honey. Let me tell you, this was one delicious combination!

Is There a Vegan Alternative to Honey?

Yes, you can substitute out the honey in this recipe for agave nectar or maple syrup. I prefer agave nectar, it’s my go-to kitchen sweetener because it’s absolutely delicious, and buying organic agave is crazy inexpensive online (compared to other organic sweeteners).  It also bakes well, so I like to add it to my baked goods.

How Do I Make Savory Vegetable Ricotta Toast with Honey?

  1. Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer
  2. Add grilled or sauteed vegetables (I used leftovers from dinner the night before), and crushed walnuts
  3. Drizzle or honey on each toast, sprinkle sea salt, and enjoy!

Ingredients
  

  • 2 slices bread use gluten free
  • 1/2 cup ricotta see Notes below for a vegan ricotta
  • 1 cup grilled or sauteed vegetables I used asparagus and zucchini that we grilled the night before
  • 2 tablespoons walnuts crushed
  • 1 teaspoon honey optional if you like the sweet/savory combination
  • Sprinkle Himalayan sea salt

Instructions
 

  • Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer
  • Sauté the chopped vegetables with a little drizzle of olive oil over medium heat in a pan, until softened. Add the sauteed vegetables (I used grilled vegetable leftovers from dinner the night before), and crushed walnuts.
  • Drizzle or honey on each toast, sprinkle a bit of salt, and enjoy!

Notes

Vegan Ricotta Recipe
  • 1 12-ounce block silken tofu
  • 1 clove garlic
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Italian seasonings
  • Pinch of Salt 
Add all ingredients to a blender or food processor, and combine until smooth.
