This vegan pumpkin pie granola recipe is a fantastic pantry-staple meal! It uses almost all ingredients you would have in your dry pantry or cupboards. You probably already have a lot of these ingredients on hand! Keeping a well-stocked pantry makes it easy to come up with delicious and healthy meals using a few staples you can rotate. What’s In This Vegan Pumpkin Pie Granola Recipe?
- Old Fashioned Oats: I always get organic oats that are certified gluten free on the packaging
- Walnuts: a fantastic and delicious addition to granola! Amazon has a giant bag of walnuts that are inexpensive so I like to stock up!
- Canned Pumpkin: this is one of my favorite canned pumpkin recipes I buy in bulk, and always have a few of these large cans of pumpkin puree in my pantry year round!
- Coconut Oil: I like to get this organic one which is a great value for the price, its great for cooking, baking, and moisturizing your skin!
- Maple Syrup: this syrup is a great natural sweetener. Make sure you are using Grade A maple syrup and none of that fake pancake variety!
- Vanilla extract: make sure to get pure vanilla, the real deal, none of that fake stuff either!
- Cinnamon
- Chocolate Chips: these vegan dark chocolate chips will make your granola extra #extra!
Sheet Pan Meal Recipes For the Win!
This pumpkin pue granola is the perfect sheet pan breakfast! I love a good sheet pan meal, especially during these fall months when the weather starts to turn cooler. Cooking on a sheetpan is one of my favorite ways to get a meal on the table fast! All the ingrediets get cooked on a single pan, which makes cleaning up a breeze. And the oven does all the work for you, so you can focus on other kitchen prep while the food cooks. How Do I Make This Pumpkin Pie Granola?
- Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix all ingredients except for chocolate chips together. Using a wooden spoon, transfer the granola mixture to the baking sheet and press down to flatten into a single layer on the sheet pan.
- Bake granola for 40 minutes, flipping halfway.
- Remove pan from oven and sprinkle the chocolate chips over the granola. The heat from the granola will allow the chocolate to melt slightly. Cool granola completely, and transfer to an airtight container. Enjoy!

Pumpkin Pie Granola (Vegan, GF)
Ingredients
- 3 cups old fashioned oats
- 1 cup walnuts chopped
- 1/3 cup pumpkin puree
- 1/3 cup coconut oil
- 1/3 cup Maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon Himalayan sea salt
- 1/2 cup dark chocolate chips use dairy free for vegan
