What’s In This Vegan Chickpea and Rice Soup?

  • Chickpeas: you can use either canned, or dried beans that you cook from scratch. If I use canned beans, I only use a no sodium added kind, like these here. That way, I can control the amount of sodium in the soup and make it as healthy as possible for my fam.
  • Rice: I used a basmati rice for this, but you can use any variety you have on hand. Basmati rice is a long grain rice, and is our favorite – I get the Royal brand here!  We eat it in soups, stews, and curries.
  • Olive oil
  • Onion
  • Garlic
  • Carrots
  • Celery
  • Vegetable stock: also a low sodium variety. You can use a vegetable base like this one, or make your own stock from kitchen scraps leftover from veggie ends!
  • Spices: thyme, garlic salt (Badia brand is the one I use), and parsley
  • Lemon juice: freshly squeezed!

How Do I Make This One Pot Chickpea Rice Soup?

  1. In a large soup pot, heat the olive oil over low heat. Add the onion and garlic and saute for 5 or 6 minutes until the veggies become translucent.
  2. Add the carrots and garlic and saute for 3 minutes more. Add the chickpeas, rice Vegetable stock, thyme, and garlic salt.  Bring to a boil then reduce to a simmer. Simmer for about 40 minutes until rice is fully cooked.
  3. Add the fresh parsley and lemon juice, enjoy!

*Instead of using canned chickpeas, you can use make your own from dried beans. Just make sure you add about 4 cups of cooked beans to this recipe for the perfect protein packed soup!
