This Velveeta Queso without Rotel is made with creamy melty Velveeta cheese, tomatoes, peppers, spices, black beans, and green onions! It’s a loaded party dip that is ready in about 10 minutes, and is a 100% crowd pleasing appetizer dip!

We love this simple dip anytime we have company over: parties, BBQs, game days, or holidays. It goes fast, and has all the amazing flavor of classic Rotel dip, without the Rotel.

We had a last minute Halloween party this year, and I wanted to make the classic Velveeta queso recipe, but didn’t have any Rotel tomatoes.  The solution? I came up with a quick and easy recipe with pantry staple ingredients that was a HUGE hit!

Everyone asked what was in this dip, so I had to share for anyone else wanted to make a simple delicious queso. It was easy, cheesy, and tasted amazing with basic panty ingredients.

One of the BEST Pantry Dip Recipes

This Velveeta queso without Rotel recipe is a fantastic pantry-staple meal!  It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. Keeping a well-stocked pantry makes it easy to come up with delicious and tasty meals using a few staples you can rotate.

What’s In This Pantry Queso Dip Recipe?

  • Onions & Scallions
  • 1 small onion, chopped
  • Tomatillo Salsa or Salsa Verde: we used a homemade tomatillo salsa for this queso, but this great tomatillo salsa you can get online here is the perfect addition too!
  • Velveeta Cheese: You can use creamy Velveeta for this recipe, or another melty cheese alternative.  You can use a plant-based cheese for a vegan substitute as well.
  • Diced Tomatoes
  • No Salt Added Black Beans: Use no salt added or low sodium beans for better flavor and control of the salt in this dish.
  • Extra virgin olive oil
  • Chili Powder: for a really nice flavor in this dip – the chili powder isn’t spicy but will give you a rich and bright flavor.
  • Cumin: also adds a really nice flavor to this recipe – cumin has a lightly smokey flavor found in a lot of chili recipes.

Make Velveeta Queso Gluten Free!

This gluten free Velveeta Queso recipe is a simple meal to make without the wheat – Velveeta is gluten free, believe it or not!  I’m all about making recipes gluten free when I can. Gluten free cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around gluten free pantry staples and swapping in a few wheat-less ingredients you can make better meals for you and your family.

How Do I Make Velveeta Queso without Rotel Tomatoes?

  1. In a pot, heat the olive oil over low heat. Add the onion and sauté for 6 to 7 minutes until onion becomes translucent. Add salsa, Velveeta, tomatoes (with the juice), black beans, and the rest of the spices to the pot.
  2. Stir well until Velveeta is melted and the queso dip is thick and creamy.
  3. Garnish with extra green onion. Serve with tortilla chips, bread, veggie sticks, or soft pretzels.  Enjoy!

A Great Make-Ahead Velveeta Dip for Entertaining

This Velveeta queso without Rotel recipe is fantastic to make ahead of time for a party, potluck, or gathering. Making this recipe in advance allows you to skip any cooking or prep on the day-of, just heat for a few minutes before serving. This is a great recipe to entertain with, or bring to an event. Ingredients
  

  • 1 tablespoon olive oil
  • 1 sweet onion chopped
  • 1/2 cup salsa
  • 16 ounces Velveeta cut into cubes
  • 1 14-ounce can Diced Tomatoes no salt added
  • 1- 13.5-ounce black beans no salt added, drained and rinsed
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 2 green onions sliced, save extra for garnish

Instructions
 

  • In a pot, heat the olive oil over low heat. Add the onion and sauté for 6 to 7 minutes until onion becomes translucent. Add salsa, Velveeta, tomatoes, black beans, and the rest of the spices to the pot.
