I love a good creamy soup recipe made with leftovers, and this turkey tortilla soup is the perfect way to use any cooked turkey you have from dinner. It’s great with light or dark meat, and is super flavorful. It’s creamy, spicy, and a total bowl of delicious comfort food.
I love how versatile this recipe is – you can add your favorite toppings or stir in a little sour cream or salsa if you prefer. I love topping mine with fresh sliced avocado to make it #extra. It’s also a great recipe to use up the leftover bits of tortilla chips at the bottom of the bag.

- Olive Oil: I like to use this fruity Zoe olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry. For the quality of oil you get, it’s an excellent value, I would highly recommend!
- Sour Cream – the base of this soup, this sour cream gives it a silky and creamy texture.
- Diced Tomatoes: I only use no salt added diced tomatoes, these boxed tomatoes are really great to stock up on! I like boxed tomatoes better because they are BPA free and more eco-friendly than aluminum cans. - Jalapenos: if you don’t have fresh jalapenos, these jarred sliced jalapenos are a fantastic addition to the dip! I use these in a pinch, they’re great to keep a jar or two in the pantry.
- Tortilla Chips – I like to use these fantastic corn tortilla chips to keep it gluten free!
- No Salt Vegetable Stock or Bouillon: I love this no salt vegetable base for my recipes because it has a great flavor and is lower in sodium. I only develop my recipes with low sodium ingredients so the ingredients shine. You can always add salt to a recipe if it needs it, but it’s almost impossible to take it out! By starting with a low sodium broth or bouillon, you can build bright vibrant flavors and add more salt later if needed.

Turkey Tortilla Soup
Ingredients
For The Soup
- 6 large poblano or Anaheim peppers
- 1 tablespoon olive oil
- 1 sweet onion diced
- 6 cloves garlic diced
- 2 jalapeños seeded
- 2 28 ounce cans No-Salt-Added Diced Tomatoes
- 4 cups No-Salt-Added Vegetable Stock
- 1 cup sour cream
- 4 cups cooked turkey shredded or ground
- 1 14-ounce can black beans drained and rinsed
- Himalayan Sea Salt and Pepper to Taste
For The Garnish
- Queso Fresco or shredded cheese
- Crumbled tortilla chips
- Cilantro chopped
- Avocados sliced
Instructions
- Turn on the oven broiler to low, and place the poblano peppers directly under. Broil them for 10 minutes or so until skin begins to blister and blacken. Set aside to cool.
- In large soup pot, heat the oil until it begins to shimmer. Add the garlic and onions and sauce for 5 minutes or so until soft.
- To the soup pot, add the jalapeños, tomatoes, stock, and bring to a simmer and cook for 15 minutes.
- Once cool, remove the seeds from the poblano peppers.
- In a blender, combine the de-seeded poblano peppers, tomato/veggie mixture and blend until smooth. Put mixture back into soup pot.
- Add the sour cream and shredded turkey and black beans to the pot and heat.
- Adjust salt and pepper seasonings
- Serve with queso fresco, avocado slices, cilantro, and tortilla chips.
