This maple roasted spaghetti squash recipe is a sweet and savory side dish, perfect for fall & winter when squash is in season! With pure maple syrup, brown sugar, butter, and a little salt & pepper – this dish is fantastic for the whole family.

A simple spaghetti squash recipe that is easy to bake in the oven (or air fryer) and requires very little prep work. Enjoy as a wonderful fall or winter side dish!

I’ve tried many savory spaghetti squash recipes, but this sweet maple roasted version may be the best one yet! It’s baked (or air fried) with a coating of pure maple syrup, butter, and brown sugar and roasted so you get delicious flavor baked into each bite.

This is a great fall recipe to make as a side dish for the family. It takes about 10 minutes to prep, then the oven or air fryer does the rest of the work! A simple side that will be your new favorite squash recipe.

This oven roasted spaghetti squash recipe is one of my favorite sides – it’s a crowd-pleaser dish that is always a major hit on our table. These delicious recipes are the perfect accompaniment to serve with protein or bread dumplings.

How Do You Roast Spaghetti Squash in the Oven

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Prep your spaghetti squash: cut each squash in half lengthwise. With a spoon, scoop out the seeds and any dark membranes. 
  3. In each squash half, add 1 teaspoon olive oil, 1 teaspoon maple syrup, 1 teaspoon of brown sugar, and a small pinch each of salt and black pepper. Using a brush, brush the insides of the squash with the maple mixture. So the insides are coated.
  4. Take a baking sheet pan, and place parchment paper on top. Place each squash half on the baking sheet, cut side-up. Bake for 40-50 minutes until the inside of the squash is fork-tender.
  5. Add a small pad of butter to each squash while it is still warm (optional but highly recommended). Serve warm from the oven.

Can You Make This In the Air Fryer?

Absolutely! Follow steps 2 & 3 above, then bake the spaghetti squash at 400 degrees Fahrenheit for 20 minutes. You may only be able to fit 2 halves at a time, so you will need to cook the squash in two batches.
