We’ve been grilling pizzas almost every week this summer, thanks to our new Big Green Egg grill (we got the XL)! When we first started grilling pizzas, we would get dough from our local pizzeria, but I wanted to try out making my own at home. And the result? A perfect pizza dough that is soft on the inside and crispy on the outside. This grilled pizza stone dough recipe is perfect for your next pizza grilling foray. I use instant yeast which makes the dough rise quickly so you don’t have to make it days in advance. And by dusting a little cornmeal on the bottom of the dough, you get a nice crunchy texture and it makes the dough easy to transfer onto a pizza stone!

The BEST Pantry Staple Pizza Dough Recipe
This easy pizza stone grilled dough recipe is a fantastic pantry-staple meal! It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. Keeping a well-stocked pantry makes it easy to come up with delicious and healthy meals using a few staples you can rotate. What’s In This Grilled Pizza Dough for the Pizza Stone?
- Warm Water: the water needs to be warm (not hot) for the yeast to start activating!
- Instant Yeast: I recently tried out this instant yeast on a whim (normally I buy active dry) and I absolutely love it! Instant yeast is great for both overnight breads and this easy quick whole wheat sliced bread recipe too!
- All Purpose Flour: I normally use King Arthur organic all purpose flour for all my recipes, I love the consistency and texture of the crumb this flour produces. If you are gluten free, then a gluten free flour would be a nice substitute in this dish. If you want to keep it a little wholesome, you can use half whole wheat flour as well.
- Olive Oil: I like to use this fruity Zoe olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry. For the quality of oil you get, it’s an excellent value, I would highly recommend!
- Italian Seasoning Blend: usually has thyme, basil, rosemary, parsley, etc. I love this bright and flavorful Italian season mix which brings gives an extra boost of flavor to this dough.
- Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
- Salt
- Corn Meal: I like this medium corn meal, I always keep some in my pantry. It’s great for adding texture to pizza crusts (also the secret for keeping them from sticking on a pizza peel!) and breads, and also to make homemade corn bread.
Same Day Pizza Dough, Or Make Ahead!
You can enjoy this easy dough the same day (just make a few hours before cooking) or ahead of time. This vegan garlic herb pizza dough recipe is fantastic to make ahead of time for a party, potluck, or just a busy week at home. Making this recipe in advance allows you to skip any cooking or prep when you are ready to eat. I made this pizza dough a few days ahead of time, wrapped it in plastic wrap, and kept it in the fridge for a few days before baking. And it tasted amazing! This is a great recipe to entertain with too – you can make a few batches and have a pizza topping bar for parties. A crowd-pleaser that everyone is sure to love!
How Do I Make Pizza Dough for Grilling?
- In a large bowl, add the water and yeast and allow to sit for 5 minutes for yeast to bloom. Add in the flour, 1/4 cup of the olive oil, Italian seasonings, garlic powder, and salt. With a wooden spoon stir until all ingredients have been well combined. You can also use a stand mixer with the dough hook attachment, and mix for 5 minutes.
- Turn the dough out onto a flat surface and knead by hand for 10 minutes until the dough becomes loose and malleable. Form into a ball, and place the dough back into the bowl. Pour the remaining 1 tablespoon of olive oil over the dough, cover with plastic wrap, and allow the dough to rise for 1-2 hours or until doubled in size.
- When ready to bake, divide the dough into thirds, each will make a 14 inch pizza. Roll each dough third into a ball, and flatten into a circle. I like to add cornmeal to a pizza peel, then place the rolled dough on top of the peel so the cornmeal is on the bottom. This helps keep the dough from sticking to the peel. Once the dough is on the peel, I add the pizza sauce, toppings, and cheese, then transfer the pizza to the hot pizza stone on the grill or oven.
- We usually get our ceramic grill up to about 550 before putting the pizza on, then let it cook for 8-10 minutes until the cheese starts to bubble and brown.

- 1/4 cup + 1 tablespoon olive oil
- 1 teaspoon Italian seasoning blend
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
