There’s nothing better in the spring and summer that making a pesto with bright and fresh herbs! This pesto is made with all your favorites, growing right in your herb garden: basil, parsley, sage, spinach or kale. I made a big batch of this healthy vibrant pesto sauce and tossed it with some fresh cooked pasta – and let me tell you, what a delish recipe!  This got extra high praise from the hubby… and I couldn’t agree more: this sauce is a winner!

A No-Cook Pesto Recipe That’s Perfect for Summer

This no-cook greed goddess pesto is a quick and simple recipe.  I love a good no-cook recipe for those days when I’m not feeling like standing around the stove, or for summer nights when it’s too hot to cook. I have a whole collection of recipes that require zero cooking at all, check them out here!  This pesto comes together in about 5-10 minutes, and doesn’t require the stove or microwave to make. Just use a few pantry staple ingredients, fresh herbs, and you have a healthy meal ready in no time.  And very little to clean up afterwards… an added bonus!

How Do I Make Green Goddess Pesto Vegan and Gluten Free?

  1. In a blender or food processor add the basil, parsley, spinach, kale, sage, garlic, olive oil, walnuts, lemon juice, salt, pepper, and bread crumbs or pepper flakes if using.
  2. Pulse in quick bursts until the pesto becomes a thick paste. If it is too thick or isn’t blending properly, add an additional tablespoon of olive oil until it has thinned out.
  3. Toss with cooked pasta, stir into Risotto, or add a scoop to soup.
