Spring has sprung on our homestead!  With the last of the falling snow, we are ready for more outdoor work and yard improvements.  To celebrate, this delicious spring vegetable pasta is now in our dinner rotation as we get plenty of fresh spring asparagus!

This vegetarian primavera pasta is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegetarian cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegetarian pantry staples and swapping in a few plant-based ingredients you can make healthier meals for you and your family.

Frozen Pea Dinner Recipes For the Win!

I used a few frozen veggies for this recipe instead of  fresh produce. Frozen produce is a great option for finding fresh and flavorful vegetables in the off season. By using freezer ingredients, I can stock up when they are on sale, and use them in all kinds of great dishes. It saves me a trip to the store, and I can add amazing veggies right into the recipe. How To Make  Creamy Primavera Vegetable Pasta?

  1. Bring a large pot of water to a boil.  Add the pasta and cook to package instructions.  Once pasta is cooked, drain and set aside.
  2. In another large pot, heat the olive oil over low heat.  Add the garlic and onions, and sauté for about 5 minutes until the vegetables begin to soften.
  3. Add the mushrooms and asparagus, and sauté for an additional 5 minutes.
  4. Pour the peas, cashew cream, the reserved pasta water, and almond milk, and bring to a slow boil.  Reduce heat and simmer until asparagus are tender, stirring frequently until sauce begins to thicken.  Add salt and pepper to taste.
  5. Fold the cooked pasta into the sauce, and stir until well combined.
  6. Serve hot, with garlic bread and a salad!
