Creamy Cucumber Pasta Salad Recipe

This creamy cucumber pasta salad recipe is a crunchy vegetarian side salad everyone can enjoy! Great as a meatless pasta side dish, a meal prep lunch, or just a great recipe for garden cucumbers.

You know we love a good pasta salad, and this creamy cucumber pasta salad does not disappoint! Loaded with fresh cucumbers (straight out of the garden!), red onions, fresh dill, and a creamy dairy-free dressing. This is a fantastic recipe for any season, and can be served along side any protein.

Fresh Veggie Pasta Salads

We had a very successful garden season this year, and our cucumbers were the most productive crop. I feel like every time I went into the garden I had a few more cucumbers to pick. The vines actually grew out of the raised garden beds and about 15 feed up the rocks next to the beds. Needless to say, I wanted to create a fun and delicious pasta salad with all the cucumbers we got this year.

This recipe was inspired by a few of my favorite recipes: creamy cucumber salad + pasta salad. Put them together, and you have a bright and fresh side dish that goes great with pretty much anything! The creamy cucumber recipe is an old family favorite, but I replaced the sour cream with a dairy free mayo. Since this is a bit of a hybrid recipe, it’s going into my Midwestern Fusion recipe category.

What’s In This Cucumber Pasta Salad Recipe?

  • Cucumber, Red Onion, Parsley, Dill
  • Pasta – I used rotini, but any medium shaped pasta will work.
  • Mayonnaise: I like to use classic mayo for this recipe. If you don’t normally like mayo, try a dairy free version… it’s creamy but still plant based.
  • Mustard: I like a prepared organic yellow mustard like this one for my recipes – it’s great to add into dressings and pasta salads, and also delish on top of veggie dogs or burgers.
  • Sweet Relish
  • Garlic Powder: to give this pasta salad a bold garlicky flavor, this garlic powder is a great addition to the salad dressing.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
  • Sea Salt & Black Pepper

How Do I Make This Creamy Cucumber Pasta Salad Recipe?

  1. In a large pot, cook pasta according to package instructions. Drain and set aside to cool.
  2. In a large bowl, add the rest of the ingredients, and stir well to combine. Add the cooled pasta and toss. Cover and refrigerate for at least 2 hours.
  3. Before serving, taste for seasoning (the dressing can change and become milder in the fridge), add extra salt or mayonnaise as needed.
  4. Garnish with fresh parsley and serve.

Ingredients
  

  • 1 lb rotini pasta gluten free
  • 2 cucumber peeled and chopped
  • 1/4 cup Red Onion
  • 1 cup fresh parsley
  • 2 tablespoons fresh dill chopped
  • 1/2 cup mayonnaise dairy free for vegan version
  • 1 tablespoon yellow mustard
  • 1 tablespoon sweet relish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon white vinegar
  • Sea Salt and Black Pepper
