What’s In This Cinnamon Granola with Maple Syrup?
- Old Fashioned Oats: I used old fashioned oats for this recipe. I found old fashioned oats work much better than quick oats, as they hold up really well while being baked.
- Cashews: I love raw unsalted cashews in this granola – there’s no need to get roasted nuts, since we will be roasting them ourselves on the sheet pan.
- Almonds: these giant bags of almonds are a great value from Amazon – they are raw and unsalted so they are perfect to toast up in this granola!
- Rice Cereal: for a little extra crunch too! I absolutely LOVE rice cereal, it’s actually my favorite breakfast cereal because it’s not to sweet.
- Maple syrup: for natural sweetness without the refined sugar, I’d definitely recommend using a natural maple syrup over sugar in this recipe. And don’t even think about using fake pancake syrup… only the real deal maple syrup in this recipe! (Being married to a Canadian, I have to add that disclaimer) 🙂
- Peanut butter: or you can substitute an almond or cashew butter instead. Like my peanuts, I only use unsalted peanut butter to keep it healthy.
- Cinnamon: which gives this granola is classic spice-y flavor! I love to load it on!
- Coconut Oil: I love keeping a few jars of this organic coconut oil on hand, it’s great for cooking and also a really nice skin moisturizer outside the kitchen.
How Do I Make This Cinnamon Almond Granola Recipe?
- Preheat the oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
- In a large bowl, stir together the peanut butter, maple syrup, cinnamon, and vanilla extract until well combined. Add the oats, rice cereal, cashews, almonds and pinch of salt to the bowl. Fold the oats into the maple syrup mixture until everything is coated.
- Pour oat mixture onto the parchment paper, and using a spatula spread it out evenly over the paper and press down with the spatula. The harder you press the oats down, the chunkier the granola will be.
- Bake granola for 20 to 25 minutes until golden brown, flipping halfway, then pressing the granola down again with the spatula.
- Remove from oven and allow granola to cool. The granola will harden more as it cools.

- 1/2 cup peanut butter
- 1/2 cup Maple syrup
- 1/4 cup coconut oil melted
- 2 tablespoons cinnamon
- 1 tablespoon vanilla extract
- 3 cups old fashioned oats
- 1 cup puff riced cereal
- 1/2 cup cashews
- 1/2 cup almonds chopped or slivered if desired
- Pinch Himalayan sea salt
Instructions

- In a large mixing bowl, stir together the peanut butter, maple syrup, cinnamon, and vanilla extract until well combined. Add the oats, rice cereal, cashews, almonds and pinch of salt to the bowl. Fold the oats into the maple syrup mixture until everything is coated.
