After my Peach Cobbler Overnight Oats were such a success, I decided to branch out and try new flavors and fruits. I made delicious vegan & paleo Baked Caramel Apples the other day, and used the leftovers in these delicious Caramel Apple Overnight Oats.
This oatmeal is great served both warm or cold! It is filled with delicious and aromatic spices and makes for an easy and wonderful breakfast. The best thing about overnight oats is that you can prep them the night before, and grab a jar on your way out the door in the morning.

What’s In These Caramel Apple Overnight Oats?

- Baked Caramel Apples (Fresh Apples, Coconut Oil, Cinnamon, Brown Sugar, Ginger, Salt)
- Old Fashioned Oats: I used old fashioned oats for this recipe. I found old fashioned oats work much better than quick oats, as they hold up really well while overnight.
- Almonds: these giant bags of almonds are a great value from Amazon – they are raw and unsalted so they are perfect to add to breakfasts, oats, or make your own almond milk!
- Walnuts
- Almond Milk – plain and unsweetened! The higher the fat content, the creamier the milk will be.
- Vegan Greek Yogurt, dairy free, plain unsweetened. I’m amazed by all the great vegan dairy substitutes nowadays, like this vegan almond Greek yogurt! It’s thick, it’s creamy, and totally great for substituting into any dish to make it dairy free.

This apple pie overnight oats recipe is the perfect recipe for homemade meal prep. I am a huge fan of meal prepping, batch cooking, and making recipes ahead. I love the convenience of cooking once and being able to enjoy homemade meals during the week when I don’t have time. How Do I Make Caramel Apple Overnight Oats?
- Prepare Baked Caramel Apples according to recipe!
- Chop 1 fresh apple into bite-sized pieces, and add to a large bowl.
- To the apple, add: the oats, flaxseed meal, almonds, walnuts, almond milk, and yogurt. Stir well to combine.
- To assemble the oats: take 4 pint sized Mason jars. Fill the bottom third with the oat mixture. Fill the middle third with the Baked Caramel Apples. And fill the top third with the oats again. Repeat for each jar!
- Seal jars, and refrigerate. Oats will last up to 4 days in the fridge.
For serving, I would definitely recommend pint-sized mason jars! Aside from being adorable, they are leak proof and perfect for taking to work or school.

Ingredients
- 1 recipe Baked Caramel Apples *note below
- 1 apple chopped into small bite-sized pieces
- 2.5 cups old fashioned oats
- 1/4 cup flaxseeds
- 1/2 cup sliced almonds
- 1/2 cup crushed walnuts
- 2.5 cups plain unsweetened almond milk
- 1 cup dairy-free Vanilla Yogurt
