This  apple pie overnight oats recipe is a perfect hearty & warm breakfast!  A no-cook breakfast to prep the night before & enjoy in the morning.

I love apple picking in the fall, it’s a major treat here in New England.  Enjoy the best of your fall apple harvest (or just your supermarket apple sale!) with these caramel apple overnight oats.

After my Peach Cobbler Overnight Oats were such a success, I decided to branch out and try new flavors and fruits. I made delicious vegan & paleo Baked Caramel Apples the other day, and used the leftovers in these delicious Caramel Apple Overnight Oats.

This oatmeal is great served both warm or cold! It is filled with delicious and aromatic spices and makes for a healthy and wonderful breakfast.  The best thing about overnight oats is that you can prep them the night before, and grab a jar on your way out the door in the morning.

This apple pie overnight oats recipe is the perfect recipe for healthy homemade meal prep.  I am a huge fan of meal prepping, batch cooking, and making recipes ahead.  I love the convenience of cooking once and being able to enjoy healthy homemade meals during the week when I don’t have time. With just a little planning and prep, you can have a week’s worth of recipes ready in the time it would take to make one portion.  Just batch cook, divide into individual containers, and place in the fridge for later!  I also made a list of my favorite meal prep products on Amazon that I use weekly. How Do I Make Caramel Apple Overnight Oats?

  1. Prepare Baked Caramel Apples according to recipe!
  2. Chop 1 fresh apple into bite-sized pieces, and add to a large bowl.
  3. To the apple, add:  the oats, flaxseed meal, almonds, walnuts, almond milk, and yogurt.  Stir well to combine.
  4. To assemble the oats: take 4 pint sized Mason jars.  Fill the bottom third with the oat mixture.  Fill the middle third with the Baked Caramel Apples.  And fill the top third with the oats again.  Repeat for each jar!
  5. Seal jars, and refrigerate.  Oats will last up to 4 days in the fridge.

For serving, I would definitely recommend pint-sized mason jars!  Aside from being adorable, they are leak proof and perfect for taking to work or school.
