This Berry Compote for Pancakes, Waffles, and French Toast is a sweet and tasty way to top your breakfast with fresh or frozen berries.  This easy berry compote has any berries of your choice (like blueberries, raspberries, blackberries, or strawberries), natural sweetener, and a little cinnamon for spice.

Waffles and Pancakes are weekend brunch staples for us, and this berry compote for pancakes is always on the menu!  What better way to top your breakfast than with a warm and delicious sauce made from fresh or frozen fruit.
 
We just found this great farm stand that opened up down the street for us, and this week they had fresh blueberries and raspberries.  I can’t resist fresh & local berries, so you know those came home with us.
 
I made light and fluffy Belgian waffles for brunch Sunday, and we topped them with loads of this fresh berry compote. It’s so easy to make, and only takes about 15 minutes, so it can cook while you make breakfast!

 Frozen Berry Recipes For the Win!

This berry compote is so versatile – you can use any fresh or frozen berries that you have on hand. Frozen produce is a great option for finding fresh and flavorful fruits in the off season. By using freezer ingredients, I can stock up when they are on sale, and use them in all kinds of great dishes. It saves me a trip to the store, and I can add amazing fruits right into the recipe.

  • Fresh or Frozen berries – I used fresh berries for this compote because I had some on hand… but normally I would make them with frozen berries. Frozen fruit is amazing to stock up on when it’s on sale, so you can enjoy flavorful produce in the off season.
  • Maple Syrup
  • Water
  • Cinnamon: which gives this compote is a depth of flavor!  I just put in a little for a warm and subtle hint of spice.
  • Corn Starch: the secret to thicken the sauce at the end, it really makes a difference.

How Do I Make Compote with Berries?

  1. To a sauce pot, add the berries, agave syrup, and water.  Cook on medium high heat, stirring frequently. The berries will dissolve and become juicer in the pan. Cook for about 10 minutes total until the berries are warm and jam-my.
  2. Stir in the cinnamon. If the compote is too watery, stir in the corn starch and cook for an additional minute until compote is thicker.
  3. Top compote on pancakes, waffles, crepes, oatmeal, or French toast… and enjoy!

Ingredients
  

  • 2 cups fresh or frozen berries I used 1 1/2 cups blueberries and 1/2 cup raspberries.
  • 2 tablespoons maple syrup or other natural sweetener
  • 2 tablespoons water
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon corn starch optional
