This beet and apple salad recipe is a little sweet, a little savory, and totally delicious. A hearty fresh salad made with fresh herbs and a simple 5-minute cider vinaigrette.

This salad is great to serve with a cozy bowl of homemade stew or slow cooked protein of your choice. This salad is vegan, gluten free, and vegetarian – so perfect for anyone at your table!

I love a hearty salad that brightens up these colder months. A fresh chopped salad with a punchy apple cider vinaigrette is the perfect accompaniment to any dinner on your table. The beets can be steamed or eaten raw (we like them raw) which have a really nice texture paired with the apple.

This salad is rich in fiber and nutrients, and is a great option if you want a salad that lasts a few days. The apple and beets taste amazing the next day after sitting in the dressing, it’s just as good the next day.

The Perfect Make Ahead Salad Recipe

This beet and apple salad is a fantastic and simple recipe to make ahead. Great for a busy weeknight, for entertaining, or just for those nights when you don’t feel like cooking.  I like to prep the salad of these ahead of time, and allow the vegetables to sit in the fridge to marinate in the dressing.  

This is one salad that really holds up in the fridge and won’t wilt like most salads.  And it’s great to enjoy any time of year! Check out all my make ahead meals for some inspiration to help you prep, keep, store, and eat!

What’s In This Apple Beet Salad Recipe?

  • Beets: you can use steamed beets or fresh raw beet root (raw beets are actually amazing and have a really nice crunch!).  You can use red beets or golden beets, either adds great fall flavors to this salad.
  • Apples – you can use granny smith apples or any sweet apple variety you like.
  • Extra virgin olive oil
  • Apple Cider Vinegar, which may surprise you but it gives the cookies a little extra tang which is really fantastic! I love using apple cider vinegar with the mother which has a great flavor.
  • Garlic
  • Dijon Mustard – for a really nice flavor and texture, Dijon is a favorite in our pantry… I’d stay clear from yellow prepared mustard for this recipe.
  • Maple syrup: for natural sweetness without the refined sugar, I’d definitely recommend using a natural maple syrup over sugar in this recipe.  It adds a nice sweetness to this snappy dressing.
  • Salt & Pepper 
  • Parsley

Other Additions

  • You could add goat cheese, crumbled feta cheese, or a brie as well!
  • Add sliced red onion or yellow onion for a more savory flavor.
  • Pine nuts or walnuts would be a great addition!
  • Serve over leafy greens or any salad mix you prefer.

How Do I Make This Beetroot and Apple Salad Recipe?

  1. In a large bowl, add the chopped beets and apples and mix.
  2. In a mason jar with a tight fitting lid or in a small bowl, add the olive oil, apple cider vinegar, Dijon mustard, garlic, and maple syrup. Seal the lid with a mason jar and shake well for 2 minutes until the dressing ingredients are well combined.
  3. Pour the dressing over the beets and apples, and stir well.  Taste and add salt and pepper if needed.

Equipment

  • Mixing Bowl
  • Pint-Sized Mason Jar

Ingredients
  

  • 2 large beets peeled and diced (about 2 cups)
  • 2 apples diced
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic minced
  • 1 tablespoon dijon mustard
  • 1.5 teaspoons maple syrup
  • Sea Salt and Black Pepper
  • 1 cup fresh parsley chopped
  • 1/4 teaspoon sesame seeds or pumpkin seeds to top

Instructions
 

  • In a large bowl, add the beets and apples and mix together.
  • In a mason jar, add the olive oil, apple cider vinegar, dijon mustard, garlic, and maple syrup. Seal the lid with a mason jar and shake well for 2 minutes until the dressing ingredients are well combined.
  • Pour the dressing over the beets and apples, and stir well.  Taste and add salt and pepper if needed.
  • Top with fresh parsley and sunflower seeds, serve, and enjoy!

    A question, not a comment: do the apples turn a slight brown, if you do not serve right away/same day? Planning to serve this type of salad to a good sized crowd, and I need it to look appetizing.
