Homemade bread is the perfect vehicle for the avo toast breakfast sandwich! I like to cut thick slices of bread, toast them lightly, and load up the mashed avocado. This is one healthy breakfast that will keep you full until lunch. It’s full of healthy fats and protein.
What’s In This Avocado Toast Breakfast Sandwich Recipe?
- Butter: I use fresh butter when I have it, or this actually amazing butter powder if I don’t have fresh. Keeping butter powder on hand is actually a really great way to stock up on your pantry staples and skip the store. This is one of those products that I bought on a whim, but actually use in cooking and baking all the time!
- Eggs: if there is a farm near you, start there for eggs… but if you buy store bought I like these free range eggs.
- Bread: a really nice sourdough is excellent for this breakfast sandwich! I really like to use Ezekiel bread if I am making the recipes gluten free.
- Avocado: the ripest, freshest ones you can find!
- Lime Juice: use fresh if you have it, or these really great lime juice packets if you don’t have fresh lime. These are great if you need a touch of lime juice even if you don’t have limes on hand.
- Everything Bagel Seasoning: one of our favorite spice blends! I use everything bagel seasoning to make hummus, sprinkle on avocado, and even use it to make everything bagels.
- Garlic Powder: for a kick and a little extra savory flavor in this dish.
For the avocado, I like to dress it simple with lime juice and spice. I found that everything bagel seasoning is so perfect on this, and mimics the flavor of a classic breakfast bagel. You can use a bagel for this sandwich too, but I always have sourdough on hand, so I used that as the sandwich base.
An Easy Weekend Brunch Breakfast Sandwich Recipe!
This everything bagel breakfast sandwich is what I call an Easy Weekend Brunch – which is on your table in under 30 minutes. These quick and simple recipes are perfect for those days when you want a healthy homecooked meal but don’t want to spend hours in the kitchen. How Do I Make This Everything Bagel Avocado Toast Sandwich?
- In a frying pan, heat butter over low heat until melted. Fry the egg, about 4 minutes on one side, then flip and remove pan from heat, but leave the egg in the hot pan for 3 minutes so it can continue cooking.
- In a medium bowl, add 1/2 avocado and mash with a fork. Add the lime juice, everything bagel seasoning, and garlic powder and stir well to combine. Set aside.
- Toast the bread until lightly golden brown. Spread one side of each piece of bread with the avocado mixture, diving it evenly between the bread slices. Add the fried egg between the avocado toasts, close like a sandwich and enjoy!
Dietary Modifications: Make it Vegan, Gluten Free, or Vegetarian!
- This recipe is naturally vegetarian. If you do eat meat and want to throw some cooked bacon or ham on it, go for it!
- To make this gluten free: make sure the bread you are using is a gluten free variety. Also you may want to check the spice blends to be sure they contain no gluten.
- To make this vegan: use avocado oil in place of the butter, and use tofu or an egg substitute in place of the egg.
