I love a good & quick cookie recipe when that late-night craving hits!  These cookies come together super quickly and bake in just 12 minutes. 

These cookies rely on some fantastic pantry staple ingredients like sugar, almond flour, and peanut butter. Pre-heat the oven, mix the ingredients, bake, and you have a tray of simple homemade cookies.

What If I Don’t Have an Egg?

There are some fantastic pantry alternatives to an egg.

  1. Applesauce – substitute 1/4 of applesauce for each egg required in recipe
  2. Flax ‘egg’ – a classic vegan baking hack, mix 1 tablespoon flaxseed meal with 2 tablespoons of water, let sit for 1 minute
  3. Corn Starch – mix 1 tablespoon corn starch with 3 tablespoons water for each egg in recipe

Quick Cooking Cookies

The amazing thing about these cookies is that they are ready so quickly!  I preheated the oven, and by the time it was ready, I had the dough made, formed, and the cookies ready on the baking sheet. 

Plus they use mostly pantry staple ingredients, so super friendly for those times when you haven’t been to the grocery store in a while.

This almond flour peanut butter cookie recipe is a fantastic pantry-staple meal!  It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. Keeping a well-stocked pantry makes it easy to come up with delicious and tasty meals using a few staples you can rotate.

How Do I Make These Cookies?

  1. Preheat oven to 350 degrees Fahrenheit (180 Celsius).  Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, add the almond flour, peanut butter, sugar, and egg. Whisk until ingredients are well combined.
  3. Scoop about 1 tablespoon of dough, roll with hands, and place on the baking sheet.  (I used a melon baller for consistent sized cookies). Repeat until dough is done.
  4. Once you have placed all the rolled dough balls on to the baking sheet, press down with a fork to form a pattern.
  5. Bake for 10-12 minutes, and remove from oven.
  6. Allow 10 minutes to cool before eating.

  • 1 cup Peanut Butter unsalted
  • 3/4 cup Sugar
