This apple berry crumble oatmeal is a delicious way to start the day, and filling enough to keep you full until lunch! Made with oats, fresh fruit, and a delicious crumble topping.

Ingredients
  

  • 3 apple chopped
  • 1 cup blueberries
  • 3 1/2 cups old fashioned oats divided
  • 1/2 teaspoon cinnamon
  • 3 cups plain unsweetened almond milk
  • 1 teaspoon vanilla extract
  • 1/2 cup butter dairy free
  • 1/2 almond flour or gluten free flour or regular flour if you aren't gluten free
  • 3/4 cup brown sugar divided
  • Pinch Sea Salt

Instructions
 

  • Preheat the oven to 375 degrees, and grease a 13x9 baking dish.
  • Mix the oatmeal: in a large bowl, combine 1 of the chopped apples, 3 cups of rolled oats, cinnamon, the almond milk, 1/4 cup of brown sugar, and the vanilla extract.  Stir well and add to the greased baking dish.
  • Make the filling: in a saucepan, heat a small pad of the butter until melted, and sautee 2 of the apples with the blueberries and pour on top of the oatmeal in the baking dish.
  • Add the crumble: in a small bowl, combine the remaining 1/2 cup of rolled oats, 1/4 flour, 1/2 sticks butter, pinch of salt, and 1/2 cup brown sugar.  Mix well and top the apple blue berry mixture with the crumble.
  • Bake in the oven for 45 minutes until the crumble topping is golden brown.  Serve with a drizzle of maple syrup or raw honey.
