This Peach Baked Oatmeal is made with ripe fresh fruit, warm spices, nuts, and rolled oats! Make this easy vegan & dairy free breakfast for a tasty way to rise & shine.

Equipment

  • 9 x 9 inch baking dish

Ingredients
  

  • 2 cups old fashioned oats gluten free
  • 2 1/2 cup plain unsweetened almond milk
  • 2 cups peaches or nectarines sliced
  • 1/4 cup brown sugar
  • 2 tablespoons ground flaxseeds
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 cup sliced almonds

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit, grease a 8x8 inch baking dish.
  • In a large bowl, add all ingredients together and stir well to combine.
  • Pour oatmeal into the baking dish and too with sliced apples.
  • Bake for 45 minutes, and enjoy!

Notes

Make Ahead Instructions

If Making the Night Before: Do Steps 2 & 3, then cover the baking dish with foil and refrigerate overnight.  In the morning, heat the oven to 375 degrees and bake for 45 minutes!
