 Tzatziki Grilled Cheese

This tzatziki grilled cheese is loaded with a creamy garlic sauce! This Greek grilled cheese can be made vegan, dairy free, and gluten free.  This is one loaded sandwich that makes a fantastic and easy 10 minute lunch - grilled cheese with tzatziki sauce is ready in no time!

Ingredients
  

  • 1 teaspoon butter
  • 2 slices bread use gluten free if you avoid wheat
  • 1/2 cup sauteed spinach
  • 2 slices melty cheese like mozzarella
  • 2 tablespoons tzatziki sauce

Instructions
 

  • Brush one side of bread with melted butter. Place it butter-side down on a plate. Add the sauteed spinach, cheese, and spread a thin layer of the tzatziki sauce on top of the cheese. Place the other side of bread on top, and brush the top side with more butter.
  • Press in a panini press for 5-10 minutes until bread is toasted golden brown, and cheese is warm and melty in the middle.  Slice, mangia, and enjoy!
