This tomatillo breakfast sandwich is what I call an Easy Weekend Meal – which is on your table in under 30 minutes. These quick and simple recipes are perfect for those mornings when you want a quick homecooked breakfast but don’t want to spend hours in the kitchen.

What’s In This Breakfast Sandwich with Tomatillo Salsa Verde?

- Egg
- Avocado
- Bread of choice, use a gluten free version if you avoid wheat
- Lime Juice
- Tomatillo Salsa or Salsa Verde: we used a homemade tomatillo salsa for this breakfast sandwich, but this great tomatillo salsa you can get online here is the perfect addition too!
- Tomatillos: thinly sliced! These are great to add to the base of your breakfast sandwich for a wonderfully tart and citrusy flavor. You can eat tomatillos raw or cooked, either works on this great breakfast sandwich.
- Garlic Powder: Also a major pantry staple ingredient that get used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
- Adobo Seasoning: a really fantastic blend of salt, pepper, garlic, and spice! I like to get one that doesn’t have a lot of salt it in, so I can control the amount of salt going into the dish.
- Onion
- Sea salt and black pepper
How Do I Make This Salsa Verde Breakfast Sandwich Recipe?
- In a frying pan, heat olive oil over low heat. Fry the egg, about 4 minutes on one side, then flip and remove pan from heat, but leave the egg in the hot pan for 3 minutes so it can continue cooking.
- In a medium bowl, add 1/2 avocado and mash with a fork. Add the lime juice, tomatillo salsa, adobo seasoning, and garlic powder and stir well to combine. Set aside.
- Toast the bread until lightly golden brown. Spread one side of each piece of bread with the avocado & tomatillo mixture, dividing it evenly between the bread slices. Top the avocado with thinly sliced onion, and one thin slice of your tomatillo, then the fried egg, then top with remaining tomatillo salsa. Enjoy!
