By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make better meals for you and your family.

Which Wine Should I Use For This Pasta Sauce?

I recommend using a good dry wine in this recipe, one that is not too sweet. Make sure you use a good wine that you would drink.  A few recommendations are:

  • Pinot grigio – I usually use pinot grigio to make my wine pasta sauces. It’s crisp and slightly sweet, which pairs nicely with the tomatoes.
  • Chardonnay – I love the buttery oaky flavor of chardonnay wine, which adds a great complexity to this simple sauce.
  • Sauvignon blanc: a light wine with a nice acidity and sweetness.

If you’re adding a little pepper, I’d recommend…

Add in Veggies If You’d Like

I sometimes add in mushrooms or fresh spinach to the sauce to pack some extra veggies in there.

But most of the time its just these simple ingredients, and a generous sauce-to-noodle ratio where I’m eating mostly sauce to go with a little bit of pasta.

How Do I Make Pasta Sauce with Wine?

1. Finely chop the garlic, and julienne the basil. Set aside.
2. In a large saucepan, add the olive oil and begin by sautéing the garlic over low heat. Once it gets lightly brown and sauté for 3 minutes until the leaves are wilted slightly.
3. Add the can of tomatoes, juice and all.  Also add the white wine and the basil. Stir until all ingredients are mixed and simmer in low for 25 minutes!
4. One little trick I did was about 15 minutes in to cooking. I added half of the tomatoes into my Vitamix and blended the tomatoes for a bit to give it a smoother texture. Then added it back to the pan!

Toss with freshly cooked pasta, and enjoy.

Hello Karen – I like to use a pinot grigio white wine for this recipe – I find that it has just the right amount of sweetness, and pairs really nicely with the tomatoes. If you don’t want something as sweet, you could also use a chardonnay. For brands, I don’t have a particular favorite, but get something nice that you would want to drink (not the $3 bottles)
