These stuffing hash browns are the perfect leftover stuffing recipe!  A great way to use leftover stuffing for breakfast or brunch, and enjoy stuffing twice.

We inevitably always have leftover stuffing.  This year, I made my low sodium sourdough stuffing recipe which was AMAZING! To use the leftovers, I wanted to develop a fun way to cook up breakfast in one sheet pan. 
And stuffing and hashbrowns was born.  You can totally add eggs to this sheet pan breakfast (just add them in 10 minutes before cook time ends) or keep it egg free.

What’s In This Hash Browns & Leftover Stuffing Recipe?

  • Frozen Hash Browns – or you can shred your own potatoes with a box grater.
  • Stuffing: This year I used my homemade sourdough stuffing, but you can use a sage and herb stuffing if desired (sage stuffing is my absolute favorite!)
  • Onion
  • Celery
  • Bell Pepper
  • Extra virgin olive oil
  • Parsley: if you don’t have fresh parsley, you can use dried.
  • Salt: I like a pink Himalayan sea salt, which has more natural minerals than regular table salt.
  • Tellicherry peppercorns: level up your table pepper with tellicherry peppercorns, SO flavorful and have a great spice. I bought a bag of this Amazon brand pepper, and we’ve been enjoying it for months.

Save that Leftover Thanksgiving Stuffing for a No-Waste Recipe!

I’m all about saving, reusing, or repurposing as much as I can in my kitchen. This leftover recipe is the perfect recipe to repurpose something you may be tempted to throw out. Instead of tossing cooked stuffing in the compost or garbage, you can repurpose it into a delicious and flavorful breakfast. 

Add some potatoes, fresh veggies, spices, and you got yourself a new meal.  I’m all about saving anything I can from my kitchen, and this sheet pan recipe is a great way to avoid letting leftovers go to waste!

 Frozen Hash Brown Recipes For the Win!

I used a few frozen veggies for this recipe instead of  fresh produce (frozen hash browns and frozen bell pepper strips!). Frozen produce is a great option for finding fresh and flavorful vegetables in the off season. By using freezer ingredients, I can stock up when they are on sale, and use them in all kinds of great dishes.

It saves me a trip to the store, and I can add amazing veggies right into the recipe. How Do I Make Leftover Stuffing Hashbrowns?

  1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl add the frozen hash browns, stuffing, onion, celery, bell pepper and olive oil. Toss well to combine.
  3. Spread hash brown mixture on baking sheet and bake for 30 minutes, flipping halfway.
  4. Remove pan from oven and top with fresh parsley.  Add salt and pepper to taste… Mangia!

  • 1 lb bag frozen hash browns
  • 2 cups cooked stuffing
  • 1/2 cup sweet onion
  • 1/2 cup celery
  • 1/2 cup bell pepper
  • 1 tablespoon olive oil
  • 1/4 cup fresh parsley chopped
