Roasted garlic is one of those delicacies that we reserve for special occasions although my husband could probably eat it everyday.  This recipe is in honor of him today on his birthday!  Its also my dad’s birthday, so happy bday to two amazing guys!
 
Brett introduced me to the joys of roasted garlic.  After slow roasting a few giant garlic heads in the oven, we would pick out the roasted cloves and spread them straight onto a slice of crusty bread.  Major garlic breath followed, but it was so so worth it.
 
Flash forward to this roasted garlic hummus recipe which uses a quick sheet-pan technique to roast the cloves right in the heads of garlic.  Blended with cooked chickpeas, smoky paprika, and bright fresh lemon juice, this hummus is a rich and flavorful dip or spread.

How Do I Make This Hummus with Roasted Garlic?

  1. Preheat oven to 400 degrees Fahrenheit. place the two halves of the garlic on a sheet pan.  Roast the garlic in the oven for 30 minutes, until the cloves turn a golden brown. Using a fork, carefully pick out the roasted garlic cloves from the head.
  2. Add roasted garlic cloves and the rest of the hummus ingredients to a food processor or high speed blender.
  3. Pulse on low and increase speed.  Blend until hummus is a smooth consistency. Serve with crudité, pita chips, or as a spread on a sandwich or wrap.

Ingredients
  

  • 1 head garlic (about 14 cloves) sliced in half horizontally
  • 2 cups No-Salt-Added Chickpeas
  • 1 tablespoon olive oil
  • 1/2 teaspoon cumin
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 1/4 teaspoon garlic salt
  • 1 lemon juiced
