This peanut butter ramen noodle recipe is a fantastic pantry-staple meal!  It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. Keeping a well-stocked pantry makes it easy to come up with delicious and tasty meals using a few staples you can rotate.

What’s In This Peanut Ramen Noodles Recipe?

  • Ramen Noodle Soup: I love this vegan and gluten free ramen noodle soup which is made with rice noodles and a miso based sauce. It has great flavor and is perfect for those who are trying to eat more vegan or gluten free. If you don’t have any dietary restrictions, then you can use any ramen noodles you desire.
  • Peanut Butter: to give this dish a creamy peanut noodle vibe. Like my peanuts, I only use unsalted peanut butter.
  • Sweet Chili Sauce: gives this dish a bright flavor and sweetness, I love adding  Thai Chili Sauce over noodles or rice, it has a great flavor and is vegan and gluten free.
  • Lime Juice
  • Sriracha – for a little heat!  We go through this sriracha, its great on soups, curries, and noodle bowls like these curry noodles.
  • Green Onion
  • Spinach
  • Lightly Salted Peanuts: for a yummy, nutty crunch!  I like to use only unsalted or lightly salted peanuts when I cook.

These peanut butter ramen noodles are what I call an Easy Weeknight Meal – which is on your table in under 30 minutes.  These quick and simple recipes are perfect for those nights when you want a good homecooked meal but don’t want to spend hours in the kitchen.

How Do I Make This Peanut Ramen Noodle Hack?

  1. Cook ramen noodles according to package instructions, but only use half of the flavor packet (discard other half).
  2. Once ramen has finished cooking, take 1/3 cup of the broth and pour it on a separate bowl. Add the peanut butter and stir until peanut butter has melted in the hot broth. Add the sriracha, chili sauce, and lime juice.
  3. Remove noodles from the cooking liquid and toss them in the peanut butter sriracha mixture until well coated. Add the spinach and green onion, and toss with crushed peanuts.  Enjoy!

Ingredients
  

  • 1 3- ounce package of ramen noodles with flavor packet use vegan or gluten free if necessary
  • 1.5 tablespoons peanut butter
  • 1 teaspoon sweet chili sauce
  • 1 teaspoon lime juice
  • 1/2 teaspoon sriracha
  • 1 green onions sliced
  • Handful spinach or other leafy greens
  • Crushed peanuts for garnish
