M&M Cookie Bars (Pantry Staple, Vegan & Gluten Free Options)

These M&M Cookie Bars are a sweet treat made with pantry staple ingredients! Warm and gooey, these bars are fun to make AND to eat.

I’ve been having fun making pantry staple treats, which use ingredients that I already have on hand. These M&M Cookie Bars were a super delicious treat and took very little time to prep and bake.

These M&M Cookie Bars Are:

  • Sweet
  • Fluffy
  • Crunchy on the outside
  • Gooey in the middle
  • Made with pantry staple ingredients
  • Can easily be made gluten free or vegan

What’s In These M&M Cookie Bars?

  • Butter, or a dairy free substitute if you are vegan
  • Brown Sugar
  • Granulated White Sugar
  • Vanilla Extract
  • Eggs, or egg substitute
  • Baking soda
  • Flour, can use a gluten free version for GF
  • Salt, just a pinch!
  • M&Ms or any other chocolate (or non dairy) candies of your choice!

How Do I Make These M&M Cookie Bars?

  1. Preheat oven to 350 degrees Fahrenheit.  Line a 9×13 baking dish with parchment paper.
  2. Melt butter in a suacepan, or in a oven safe bowl
  3. In a large mixing bowl, add the melted butter, brown sugar, granulated sugar, vanilla extract, and eggs and whisk to combine.
  4. Add the baking soda, flour, salt, and the M&Ms (making sure to reserve a few for the top!) And stir well to combine into a dough.
  5. Add dough to the baking dish, and bake at 350 for 30-35 minutes.
  6. Remove from the oven, and allow cookie bars to cool for at least an hour before eating.

Dietary Modifications

  • To make these cookie bars gluten free, just make sure to use a gluten-free flour or baking mix.  Also make sure the chocolate candies do not contain gluten.
  • To make these vegan, use a plant-based butter and egg substitute.  I like to use a flax egg (1 tablespoon flax seed meal mixed with 1 tablespoon water) or apple sauce instead of the egg.

  • 1/2 brown sugar

  • 1 teaspoon vanilla

  • 1/2 teaspoon salt
