Get your potato masher out, because these super simple Instant pot potatoes are the perfect side dish you can enjoy all year long. And they couldn’t be easier to make – with just 8 minutes of cook time!

Give your potatoes a quick dice, add them to the pot, fill with water, and cook under high pressure. Quick release the pressure, add in some cream and spices, and you have a fantastic side dish that is simple enough for a weeknight dinner, or fancy enough for Thanksgiving or any holiday dinner.

This Instant pot mashed potatoes recipe is the tastiest, coziest dinner side. It’s perfect for a hearty meal for the family, and also great to make for company if you are having guests over on special occasions. Pressure cooking potatoes gives them a wonderful texture and this classic side dish is  ready quickly!

The Instant Pot does most of the work, so you can enjoy hands-off time while you prep main courses or a salad! With just a few simple ingredients you have creamy mashed potatoes with a tasty, buttery flavor in minutes. Our favorite way to mash potatoes!

What’s In These Pressure Cooker Garlic Mashed Potatoes

  • Potatoes – I used Yukon gold potatoes, but  you can use russet potatoes, red potatoes, or even white potatoes if desired. Leave the potato skin on for a heartier texture.
  • Fresh garlic cloves
  • Milk – any variety you’d like… but the higher the fat content, the creamier it will be!  I try to add Whole Milk,  Half and half, or heavy cream if I have it on hand… or you can use full-fat coconut milk for a plant based option.
  • Sour Cream – or cream cheese
  • Butter – you can use regular unsalted sweet cream butter for this recipe, or a plant based version if desired.
  • Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
  • Kosher Salt & Black Pepper

Other Optional Add Ins

You can add fresh herbs in these great mashed potatoes like rosemary or parsley.

Add chicken broth or vegetable broth instead of water.

​Substitute olive oil in place of butter if you’d like.

Stir in cheddar cheese for cheesy velvety potatoes.

How To Make Mashed Potatoes in the Instant Pot

  1. Add the diced potatoes and the water to the Instant Pot.  Set on High Pressure or Manual for 8 minutes.
  2. Once finished cooking, do a quick release of the remaining pressure.  Keep the Instant Pot on ‘warm’ setting for the next few steps. Drain the water from the potatoes, and place the potatoes back in the Instant Pot.
  3. Stir in the milk, butter, sour cream, garlic powder, salt, and pepper.
  4. Using a potato masher, whip until the potatoes reach your desired consistency.
  5. Taste and adjust seasonings, adding more salt if needed.
  6. Store leftover potatoes in an airtight container for up to 3 days.

The Best Way to Mash Potatoes

You can mash potatoes with a variety of tools – the classic hand-held potato masher is usually my go-to. 

You can also use a potato ricer for old-school creamy potatoes.

I’ve used a immersion blender as well for perfectly whipped potatoes. Or even use an electric hand mixer with a beater attachment.

Ingredients
  

  • 8 potatoes about 3 lbs, skins on diced into small pieces
  • 12 cloves garlic whole
  • 2 cups water
  • 1 cup milk you can choose any variety (whole, 2%, half & half)
  • 1/4 cup sour cream
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • sea salt and black pepper to taste

Instructions
 

  • Add the diced potatoes and the water to the Instant Pot.  Set on High or Manual for 8 minutes.
  • Once finished cooking, do a quick release.  Keep the Instant Pot on ‘warm’ setting for the next few steps. Drain the water from the potatoes, and place the potatoes back in the Instant Pot.
  • Stir in the milk, butter, sour cream, and garlic powder.
  • Using a potato masher, whip until there are no more lumps in the potatoes.
  • Taste and adjust seasonings, adding salt and pepper if desired.
