Homemade Hummus VS Store-Bought

For this recipe, you can use homemade hummus or just store bought. I love hummus because it’s such a versatile dip and you can add any flavors you’d like! I have some fantastic recipes for Green Goddess Hummus, Roasted Garlic Hummus, and even a oil free hummus in the instant pot.

Easy Hummus Toast Recipes for Garden Cucumbers

This hummus toast recipe is the perfect way to use those extra garden cucumbers.  Throughout the summer our garden is overloaded with cucumber plants all ripening at once.  I make this garden fresh toast recipe with my extra cucumbers and a tasty meal is ready in no time.

Enjoy that summer garden bounty with this bright and fresh hummus toast recipe all summer long.  There’s no better cucumbers than seasonal produce right out of the garden – if not your garden, then get fresh cucumbers at your local farmer’s market stand.

What’s In This Vegan Hummus Toast with Quick Pickled Cucumbers?

See the recipe card below for full ingredient amounts and recipe instructions!

  • Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup.
  • Hummus: store bought or homemade, whatever you have on hand!
  • Vinegar and Sugar: for the marinade. I used red wine vinegar and a teaspoon of regular granulated sugar. But you can substitute a natural sweetener (like honey or maple syrup) if you prefer.
  • Cucumbers: These work great with either large cucumbers or smaller Persian cucumbers. You can choose to peel them or keep the skin on – what ever you prefer!

Easy Weekday Breakfasts

This Hummus Toast with Cucumber is what I call an Easy Weeknight Meal – which is on your table in under 30 minutes. These quick and simple recipes are perfect for those days when you want a flavorful homecooked meal but don’t want to spend hours in the kitchen.

I have a whole section of The Herbeevore dedicated to Easy Weeknight Meals, that are great for the whole family. From soups and stews, to pastas and proteins – a tasty meal can be on your table in no time. Even faster than ordering takeout!

Quick Chickpea Breakfast Recipes

This recipe calls for chickpeas aka garbanzo beans. This are one of my favorite beans – packed with plant-based protein, and are high in fiber and nutrients! I’d recommend using a no-salt-added variety to keep the overall sodium content down, so you can control how much sodium is in the dish. Canned chickpeas taste great, so if you are using canned chickpeas, just watch the sodium or added salt content.

I make dried beans in my Instant Pot every week, it’s a great way to save on cost. If you’re a bean fan, then I’d recommend an Instant Pot or electric pressure cooker as a way to take your recipes to the next level!

Hi Jane, you can certainly try! They may taste a little salty depending on the kind of pickles you have. Let me know if you try it out, and how the pickles work

    • The Herbeevore

Hi Kirsty, sure! It’s to cover the vegetables so the vinegar mixture is over the top. Depending on what bowl you use for the vinegar you may not need to add the water. Let me know how the recipe goes!
