The last time my family was in town, I asked my dad for as many family recipes he could remember…. specifically this one! We had a few great recipes for cucumbers growing up (Like THIS Recipe for a Sweet and Tangy Cucumber Salad). He gave the below recipe to me, but I tested and it was great! I added the sliced onion to the recipe, because I remember having it that way growing up and it gives the dish a great flavor.

This creamy cucumber salad with sour cream has been made time & time again in our household. I make it for summer cookouts when friends are over, or just as a weeknight recipe when I have extra cucumbers. The combination of the sour cream, dill, cucumber, and onion is classic. It’s a great salad to serve with heavier fare.

Grow Fresh Dill on Your Counter All Year Long

We got this great countertop Aerogarden which is fantastic for growing herbs in the winter.  We actually got it when we lived in a smaller apartment, but even now that we own an acreage we still use it year-round! 

I love growing herbs on my countertop like fresh basil, dill, mint, sage, thyme, parsley, and lemon balm – perfect for this cucumber salad. It uses LED lights and water, so no messy soil needed – you can have fresh herbs at your fingertips any time.

I love picking a few springs of parsley to chop on pastas, adding basil leaves to soups, and tossing some dill in with my pasta salads. It also makes a great gift for anyone who would like fresh herbs… no big kitchen or green thumb required!

  • Cucumbers, Onion, Fresh Dill
  • White Balsamic Vinegar – this may seem like a very specific addition to my pantry but it is my favorite vinegar! It’s the secret to the perfect coleslaw or kidney bean salad. When I can find this on sale, I stock up!
  • Accent Seasoning – I see this Accent Seasoning come up often in my old family recipes – a great way to add a little flavor to the dish without a ton of sodium.
  • Black pepper
  • Sour Cream – the base of this dressing, this sour cream gives it a silky and creamy texture.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
  • Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love this garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
  • Granulated Sugar

A Make Ahead Cucumber Salad for Entertaining

This cucumber salad with sour cream recipe is fantastic to make ahead of time for a party, potluck, or gathering. Making this recipe in advance allows you to skip any cooking or prep on the day-of. This is a great recipe to entertain with, or bring to an event.

Chilling this recipe overnight in the fridge actually makes it taste better the next day. A crowd-pleaser that everyone is sure to love! Check out my other make ahead meals too.

How Do I Make Sour Cream Cucumber Salad?

  1. Peel the cucumbers, slice thinly, and soak in salted water (1 tsp of salt) for an hour in the fridge.
  2. Drain in a colander and dry the cucumbers with a towel so all water has been removed. I dried them on a rack with a layer of paper towels. Don’t skip this step, or else the cucumbers will have too much water and the salad won’t be as crisp!
  3. Once dry, add the cucumbers in the largest mixing bowl you have. Thinly slice an onion into large ribbons. Mix with all ingredients together in the bowl, and chill for 2 hours in the fridge before serving.

Ingredients
  

  • 4 large cucumbers peeled and sliced
  • 1 sweet onion sliced
  • 1 teaspoon Sea Salt
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Accent seasoning salt
  • 1 cup sour cream
  • 1/4 cup fresh dill
  • 1 tablespoon sugar
  • 2 teaspoons Black Pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Instructions
