This egg salad lettuce wrap is a meatless low carb lunch recipe loaded with egg salad, creamy keto dressing, and crunchy vegetables.  A vegetarian high protein sandwich that is creamy, delicious, and perfect for brunch.

I love this egg salad wrap for a light lunch, which is ready in minutes if you have hard-boiled eggs on hand. Mix the filling, roll it in lettuce cups, and you have a delicious hearty meal in no time!

This egg salad lettuce wrap is a fun twist on classic egg salad!  It has has loads of flavor, creaminess, and is perfect for a high protein lunch or dinner.  This wrap makes an easy lunch recipe, ready in just about 5 minutes if you already have hardboiled eggs.
 
This is one of my favorite recipes for using up eggs. I make a big batch of my easy peel hardboiled eggs, and turn them into a meatless lunch recipe which is fantastic eaten cold.  And the egg salad can be made ahead of time, so you can meal prep the salad on a Sunday and enjoy a few days of lunches ready-made!

Meatless Keto Lunches in 10 Minutes

This meatless keto egg salad wrap recipe is ready from start to finish in just about 10 minutes… a great quick weekday lunch, or a simple brunch to make on the go for busy weekends.  These quick and simple recipes are perfect for those days when you want a  homecooked meal but don’t want to spend hours in the kitchen.

How Do I Make This Low Carb Egg Salad Wrap Recipe?

  • In a large bowl, add the hardboiled eggs.  With a fork, mash the eggs a few times each to break them up into smaller pieces.
  • Add the celery, onion powder, bell pepper, mayonnaise, mustard, relish.  Stir well to combine, ensuring the dressing evenly coats the eggs.
  • Taste and add salt and pepper if desired.
  • For the wrap, lay out 7-8 large lettuce leaves per sandwich. I like to place a piece of tin foil down and then add the lettuce on top of the foil (it makes rolling the wrap easier).  Add the egg salad to each wrap in the center of the lettuce. Using the tin foil, life one side of the foil up, and fold it over the egg salad, rolling the rest of the lettuce around the egg salad into a wrap.  Enjoy!

Ingredients
  

  • 6 hardboiled eggs shells removed and rinsed
  • 1/2 cup chopped celery
  • 2 tablespoons mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon relish you can use dill or sugar free sweet relish for keto
  • 1/3 teaspoon onion powder
  • Sea Salt and Black Pepper
  • 18 large pieces romaine lettuce or any large-leaf lettuce like butter or iceberg

Instructions
