Chicken Marbella in the Instant Pot (Keto, Paleo, Whole30, Gluten Free)

This chicken marbella in the instant pot is a easy and delicious weeknight dinner! Keto, paleo, and Whole30 friendly, everyone at the table will love this dish.
This family recipe for Chicken Marbella in the instant pot came from my mother-in-law, who makes delish soups and stews!  She introduced me to this dish, and I absolutely loved it.  This version comes together quickly in the Instant Pot for an easy weeknight dinner!

This chicken marbella has fantastic flavor – the spices, white wine, and dried fruit really amp up this chicken to a whole new level.  I love the sweet/salty combo of this dish – its a perfect easy throw together meal!

Whats In This Chicken Marbella?

  • Chicken thighs, or breasts
  • Olive Oil
  • Garlic
  • White Wine
  • Onion
  • Carrots
  • Dried Plums or prunes
  • Kalamata olives
  • Capers
  • Vegetable Stock
  • Maple syrup or natural sweetener of choice
  • Oregano
  • Salt & Pepper to Taste

How Do I Make Chicken Marbella?

In the Instant Pot

  1. Set the instant pot to Saute Mode, heat the olive oil for a few minutes until very hot.
  2. Season the chicken with salt and pepper, and place skin down in the instant pot.  Cook for 10 minutes until the skin of the chicken begins to brown.  Flip over and cook for another 7 or 8 minutes.  Remove chicken from the Instant Pot And transfer to a plate.
  3. To the instant pot, add the garlic and saute for 2 or 3 minutes until it.begins to brown.  Add the wine and deglaze the bottom, scraping any pieces of chicken or garlic that stuck to the bottom of the pot.
  4. Add the onion, carrots, potatoes, prunes, olives, capers, Vegetable stock, brown sugar and oregano. Stir to combine.
  5. Place the wire rack insert over the Vegetables, and add the chicken, skin side up.
  6. Seal the lid, and set the instant Pot to Manual or Pressure Cook and cook on high for 15 minutes.
  7. Serve over cauliflower rice or noodles.

In the Slow Cooker

  1.  Add all ingredients, and cook on high heat for 7-8 hours.
  2. Serve over cauliflower rice or noodles.

Ingredients
  

  • 2 tabelspoon olive oil
  • 6 chicken thighs
  • 8 cloves garlic
  • 1 cup white wine
  • 1 yellow onion sliced
  • 2 carrots slices into rounds
  • 6 red potatoes diced (skip if keto)
  • 1 cup prunes
  • 1/2 cup kalamata olives halved
  • 2 tablespoons capers
  • 2 cups Vegetable stock
  • 1 tablespoon maple syrup or other natural sweetener
  • 1 teaspoon oregano

Instructions
 

In the Pressure Cooker
