I absolutely love bright and healthy light lunches like this beet hummus tartine!  A tartine is a French open face sandwich, meant to be eaten with one hand :).  I made a huge batch of beet hummus the other day, and absolutely loved adding a scoop on toast with some homegrown microgreens. I used these rambo radish seeds to sprout my migrocreens, but you can use any leafy vegetable or sprout as a topper!
