Avocado Toast Breakfast Sandwich (Vegetarian, Gluten Free)

As if avocado toast could get any better…. it can! Don’t get me wrong, we are huge fans of avocado toast around here. Since we make our own sourdough bread, it’s usually a weekend staple for us. I decided to get a little fancy and try something new with my last batch of avocados. Behold: the avocado breakfast sandwich!  A fried egg sandwiched between two slices of crusty sourdough, and slathered with a bright and fresh avocado.  Absolute brunch perfection.

Homemade bread is the perfect vehicle for the avo toast breakfast sandwich! I like to cut thick slices of bread, toast them lightly, and load up the mashed avocado.  This is one healthy breakfast that will keep you full until lunch. It’s full of healthy fats and protein.

What’s In This Avocado Toast Breakfast Sandwich Recipe?

1 tablespoon butter
1 egg
2 slices bread, gluten free
1/2 ripe avocado
1 tablespoon lime juice
1/4 teaspoon everything bagel seasoning
1/4 teaspoon garlic powder

For the avocado, I like to dress it simple with lime juice and spice.  I found that everything bagel seasoning is so perfect on this, and mimics the flavor of a classic breakfast bagel. If you want to try different spice combinations, go for it!  I have a guide here for my 3 favorite ways to eat avocado toast.  You can use a bagel for this sandwich too, but I always have sourdough on hand, so I used that as the sandwich base.

How Do I Make This Everything Bagel Avocado Toast Sandwich?

  1. In a frying pan, heat butter over low heat until melted. Fry the egg, about 4 minutes on one side, then flip and remove pan from heat, but leave the egg in the hot pan for 3 minutes so it can continue cooking.
  2. In a medium bowl, add 1/2 avocado and mash with a fork. Add the lime juice, everything bagel seasoning, and garlic powder and stir well to combine. Set aside.
  3. Toast the bread until lightly golden brown. Spread one side of each piece of bread with the avocado mixture, diving it evenly between the bread slices.  Add the fried egg between the avocado toasts, close like a sandwich and enjoy!
