We just got our first grocery delivery in a long time last week, and fresh ripe avocados were a real treat. Normally we love having an avocado with our weekend brunch, and I love dicing up a few for this vegan avocado salad recipe.
 
It’s a real treat to have fresh ripe avocados, and this is the perfect way to enjoy them!  This gorgeous avocado lime salad is a delicious way to simply dress this fruit. This salad is versatile enough to enjoy on it’s own, or pile on top of other recipes for an added bit of flavor.

  • Avocado: I love this fruit,  avocados are one of my favorite foods of all time. I used to love getting loads of fresh ripe avocados from my friend’s trees when I lived in California.
  • Lime Juice: fresh squeezed!  If you don’t have fresh limes, this instant lime is actually really great in a pinch, I always keep some in the pantry.
  • Extra virgin olive oil
  • Chili Powder: for a really nice flavor in this salad – the chili powder isn’t spicy but will give you a rich and bright flavor.
  • Sea Salt & black pepper

How Do I Make This Marinated Avocado Salad Recipe?

  1. Add diced avocado to a bowl, drizzle lime juice and olive oil over the top.
  2. Add spices, and gently toss well to combine, ensuring the avocado is coated in the olive oil and pepper.

Ingredients
  

  • 1 large avocado pitted, peeled, and diced
  • 1/2 lime juiced
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • Sea Salt and Black Pepper

Instructions
 

  • Add diced avocado to a bowl, drizzle lime juice and olive oil over the top.
