3 Ingredient Peanut Butter Cookies (No Flour, Gluten Free, Low Sodium)

These crazy delicious Peanut Butter Cookies (No Flour, Gluten Free) are so simple to make! Just 3 Ingredients, 20 minutes, and you have fresh hot cookies!

I’ve been doing a lot more sweet baking lately as I’m trying to boost our quarantine morale with a #TreatYoSelf attitude!  These cookies are the perfect snack or dessert, and ready in 20 minutes!  These adult & kid-friendly cookies are the perfect treat for when you are stuck in the house.

  • Warm
  • Easy to make
  • Made with Pantry Staple Ingredients
  • Gluten Free, and make without any flour
  • Can be made vegan with an egg substitute

I’m classifying this recipe as a ‘Family Recipe’ here, as it was given to me by my mother-in-law.  She shared these cookies with the whole family, and a few of us made them right away. The recipe originated from this amazing Youtube video here, but I adjusted the baking time a bit as I like my cookies crunchier.

What’s In these Peanut Butter Cookies (No Flour, GF)?

  • Peanut Butter
  • Sugar
  • 1 Egg

…yep, thats it!  Couldn’t be easier to quicker to make.

The amazing thing about these cookies is that they are ready so quickly!  I preheated the oven, and by the time it was ready, I had the dough made, formed, and the cookies ready on the baking sheet.  Plus they use mostly pantry staple ingredients, so super friendly for those time (like now!) when you haven’t been to the store in a while.

What If I Don’t Have an Egg?

There are some awesome pantry alternatives to an egg.

  1. Applesauce – substitute 1/4 of applesauce for each egg required in recipe
  2. Flax ‘egg’ – a classic vegan baking hack, mix 1 tablespoon flaxseed meal with 2 tablespoons of water, let sit for 1 minute
  3. Corn Starch – mix 1 tablespoon corn starch with 3 tablespoons water for each egg in recipe

Smooth or Crunchy Peanut Butter?

The answer is…. EITHER! I used crunchy, because I like the texture and never buy smooth so its what I had on hand, but either one would be awesome. Just you what you got!

Or, alternatively, if you have a peaut allergy you can make these with the nut butter of your choice (almond butter would be delish)!

How Do I Make These Cookies?

  1. Preheat oven to 350 degrees Fahrenheit (180 Celsius).  Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, add the peanut butter, sugar, and egg. Whisk or beat with a hand mixer until ingredients are well combined.
  3. Scoop tablespoons of dough, roll with hands, and place on the baking sheet.  I used a melon baller for consistent sized cookies.
  4. Once you have placed all the rolled dough balls on to the baking sheet, press down with a fork to form a pattern.
  5. Bake for 10-12 minutes, and remove from oven.
  6. Allow 5-10 minutes to cool before eating.

Instructions
